Jalapeno sausage with roasted vegetables
Simple weeknight meal with leftovers.

Ingredients
- rice
- jalapeno or peppered-sausage, sliced into oblong coins
- 3 cloves garlic, minced
- 1 green bell pepper
- 1 red bell pepper
- 1 large sweet potato
- 2 heads broccoli
- salt and pepper
- seasoning, Italian blend (or similar)
Directions
- Prepare the rice.
- Slice vegetables to bite sized pieces, and combine in large bowl with sausage and garlic. Toss with olive oil and seasoning.
- Roast at 415 until potato is tender.
