Jalapeno sausage with roasted vegetables

Simple weeknight meal with leftovers.

Ingredients

  • rice
  • jalapeno or peppered-sausage, sliced into oblong coins
  • 3 cloves garlic, minced
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 large sweet potato
  • 2 heads broccoli
  • salt and pepper
  • seasoning, Italian blend (or similar)

Directions

  1. Prepare the rice.
  2. Slice vegetables to bite sized pieces, and combine in large bowl with sausage and garlic. Toss with olive oil and seasoning.
  3. Roast at 415 until potato is tender.
