Honey Chipotle Chicken Tacos

Ingredients

  • 2 1/2 pounds boneless, skinless chicken thighs
  • 3 tablespoons honey
  • 2 teaspoon onion powder
  • 2 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1.5 teaspoon kosher salt
  • 3 to 4 chipotles in adobo sauce, finely chopped
  • 3 tablespoons adobo sauce (i.e., sauce from can)
  • 2 (15-ounce) can black beans, rinsed and drained
  • 2 limes
  • Tortillas
  • Pickled onion (for topping)
  • Avocado (for topping)
  • Queso Fresco or Cotija (for topping)
  • whatever other toppings (cilantro, onion, etc)

Directions

  1. Combine the chicken, honey, onion and garlic powders, cumin, salt and chipotle chiles and adobo sauce in a dutch oven. Stir well. Cook for 4 hours at 200 F or 2 hours at 300 F.
  2. Shred chicken and make tacos!
