Ingredients
2 1/2 pounds boneless, skinless chicken thighs
3 tablespoons honey
2 teaspoon onion powder
2 teaspoon garlic powder
1 teaspoon ground cumin
1.5 teaspoon kosher salt
3 to 4 chipotles in adobo sauce, finely chopped
3 tablespoons adobo sauce (i.e., sauce from can)
2 (15-ounce) can black beans, rinsed and drained
2 limes
Tortillas
Pickled onion (for topping)
Avocado (for topping)
Queso Fresco or Cotija (for topping)
whatever other toppings (cilantro, onion, etc)
Directions
Combine the chicken, honey, onion and garlic powders, cumin, salt and chipotle chiles and adobo sauce in a dutch oven. Stir well. Cook for 4 hours at 200 F or 2 hours at 300 F.
Shred chicken and make tacos!
