La Pepita Salad

Ingredients

Salad Ingredients

  • Kale
  • 1 avocado
  • 1 can black beans
  • Crumbled cojita cheese
  • Chicken

Dressing Ingredients

  • 1/4 cup lime juice
  • 1/4 cup orange juice (freshly squeezed)
  • 1 tsp ground cumin
  • 1/4 tsp kosher salt
  • 1/4 tsp chili powder
  • 2 cloves garlic
  • 1/2 cup olive oil (or less)

Directions

  1. Prepare the salad cold ingredients. Clean and chop kale, and place into a large bowl. Rinse and drain the beans and set aside.
  2. Prepare the sald dressing by mixing all dressing ingredients. 30 mins prior to serving, dress the kale.
  3. Pan sear chicken chicken. Briefly cool, then shred chicken.
  4. Dice avocado, and crumble cheese. Add the beans, avocado, cheese, and chicken to the kale. Add more dressing or salt to taste.
