La Pepita Salad

Ingredients
Salad Ingredients
- Kale
- 1 avocado
- 1 can black beans
- Crumbled cojita cheese
- Chicken
Dressing Ingredients
- 1/4 cup lime juice
- 1/4 cup orange juice (freshly squeezed)
- 1 tsp ground cumin
- 1/4 tsp kosher salt
- 1/4 tsp chili powder
- 2 cloves garlic
- 1/2 cup olive oil (or less)
Directions
- Prepare the salad cold ingredients. Clean and chop kale, and place into a large bowl. Rinse and drain the beans and set aside.
- Prepare the sald dressing by mixing all dressing ingredients. 30 mins prior to serving, dress the kale.
- Pan sear chicken chicken. Briefly cool, then shred chicken.
- Dice avocado, and crumble cheese. Add the beans, avocado, cheese, and chicken to the kale. Add more dressing or salt to taste.
