Shaved Brussels Sprouts Salad

Ingredients
For the Salad
- 1 lb brussels sprouts ends trimmed
- 1 large apple
- 1/4 cup dried cranberries
- 1/3 cup shredded or shaved parmesan cheese
- kosher salt to taste
- shredded cooked chicken (optional)
For the Dressing
- 1/3 cup olive oil
- 1 tbsp fresh lemon juice
- 2 tbsp apple cider vinegar
- 1 tbsp pure maple syrup
- 2 tsp dijon mustard
- 1 clove garlic minced
- kosher salt and black pepper to taste
Directions
- Begin cooking chicken, if using.
- Shave/chop vegetables and apple. Combine vegetables and chicken in a large bowl.
- Mix dressing ingredients.
- Pour dressing over salad. Mix, serve.
