Shaved Brussels Sprouts Salad

Ingredients

For the Salad

  • 1 lb brussels sprouts ends trimmed
  • 1 large apple
  • 1/4 cup dried cranberries
  • 1/3 cup shredded or shaved parmesan cheese
  • kosher salt to taste
  • shredded cooked chicken (optional)

For the Dressing

  • 1/3 cup olive oil
  • 1 tbsp fresh lemon juice
  • 2 tbsp apple cider vinegar
  • 1 tbsp pure maple syrup
  • 2 tsp dijon mustard
  • 1 clove garlic minced
  • kosher salt and black pepper to taste

Directions

  1. Begin cooking chicken, if using.
  2. Shave/chop vegetables and apple. Combine vegetables and chicken in a large bowl.
  3. Mix dressing ingredients.
  4. Pour dressing over salad. Mix, serve.
