Chicken Gyro Chopped Salad

Ingredients

  • 2 tablespoons dried oregano
  • 1 tablespoon ground cumin
  • 1 teaspoon ground cinnamon
  • 2 teaspoons dried basil
  • 2 teaspoons sweet paprika
  • 1/4 teaspoon ground cayenne
  • 2 tablespoons garlic powder
  • Salt and pepper
  • 1/2 cup full-fat Greek yogurt
  • 7 tablespoons olive oil
  • 1/4 cup lemon juice (from about 2 small lemons)
  • 1.5 lbs boneless, skinless chicken breasts, sliced horizontally in half
  • 1/2 cup dill, roughly chopped
  • 2 tablespoons mayonnaise
  • 1 large head romaine lettuce, quartered lengthwise and sliced crosswise into 1/2-inch pieces (about 10 cups)
  • 1 pint cherry tomatoes, halved
  • 1 large cucumber, peeled, quartered lengthwise and sliced into ¼-inch pieces
  • 1 small red onion, thinly sliced
  • 1 cup slightly crushed pita chips
  • 4 ounces feta, crumbled, plus more for serving

Directions

  1. Marinate the chicken 30 minutes to 24 hours. In a large bowl, combine the oregano, cumin, cinnamon, basil, paprika, cayenne, 1 tablespoon garlic powder, and 1 tablespoon of salt. Whisk in 1/4 cup of yogurt, 1 tablespoon of olive oil, and 2 tablespoons of lemon juice. Add the chicken and make sure it’s completely coated.
  2. Prepare the dressing. In a small bowl, whisk together the dill, mayonnaise, 1/4 cup of olive oil, the remaining 1 tablespoon of garlic powder, 1/4 cup of yogurt, and 2 tablespoons of lemon juice. Season with salt and pepper, and set the dressing aside.
  3. Cook the chicken. Heat the remaining 2 tablespoons of olive oil in nonstick skillet over medium-high heat. Let the extra marinade drip off the chicken before adding it to the pan, in batches. Allow to sear both sides, flipping until reaching internal temp 165 F. Once done, let the chicken rest, then chop it into 1/2-inch pieces.
  4. Assemble the salad. Arrange “chopped salad style” or mix for large group serving. Include tomatoes, cucumber, onion, cooked chicken, pita chips, and crumbled feta. Drizzle dressing over the salad and serve with the remaining dressing and more feta on the side.
